Christmas is the time of good food and eating way too much.
This would be a great idea for when you’re cooking your Christmas meal and you’re wanting a sweet treat while you wait.
I ended up making 3 different cupcakes. Mince meat, marbled and plain.
This recipe makes 6 large cupcakes and 10 small cupcakes.
110g of margarine
110g of butter
220g of sugar
1/2 teaspoon of vanilla essence
220g of self raising flour
1-2 tablespoon of milk
1: Cream together the butter, margarine and sugar.
2: Add vanilla essence.
3: Beat the eggs and gently add to the mix.
4: Finally add the flour and beat together well.
5: Add milk if the mixture is too stiff.
6: Separate your mixture into 4 bowls.
7: In the first bowl add some mince meat and mix well.
8: In the second bowl add some red food dye. DO NOT MIX THE MIXTURE! Take a skewer or the end of a spoon and gently swirl it around the cake mixture to make a marbled effect.
9: In the third bowl add some green food dye. DO NOT MIX THE MIXTURE! Take a skewer or the end of a spoon and gently swirl it around the cake mixture to make a marbled effect.
10: In the fourth bowl you don’t need to do anything as we’re keeping that cupcake mixture plain.
11: Spoon all the mixtures into different cupcake cases.
12: Put in the oven. Gas mark 180 for 15-20 minutes.
13: Once baked, take out of the oven and allow to cool.
14: It’s time to make some icing, you can make any icing you like.
15: Once you’ve made your icing, separate your icing into 3 bowls.
16: You’re making a red, green and plain icing.
17: In the first bowl add some red food colouring and mix together.
18: In the second bowl add some green food colouring and mix together.
19: In the third bowl you don’t need to do anything as you’re wanting to keep it plain.
20: Pipe the mixtures onto the top of the cupcakes.
I’ve brought some Christmas cake decorations to add.
